Staples of African-American communities: Sumalayo Jackson, interim director of the Charles E. Brown African-American Cultural Center, chooses a portion of fried green tomatoes during a regional soul cuisine lunch at Generations in the Hulman Memorial Student Union on Thursday on the Indiana State campus. The center and Sodexo sponsored the lunch as part of Black History Month at ISU.
"We wanted to make sure students could enjoy dishes that are significant to them and that are part of their experiences and heritages," said Jackson about the regional offereings.
"People ask why is it called 'soul food?'," added Jackson "It's soul food because it is comfort food."
